Flour-less Peanut Butter Cookies

This one is so simple but oh so good & definitely a favorite in our home.


A young friend recently eliminated flour from her diet & was bemoaning her lack of cookie options.


I think we found at least 1 solution. These are tasty with white, milk, or semi sweet chocolate drizzled over top for some variety.


But plain works too & pairs so well with a tall cool glass of milk.

Lowdown:

1 c. peanut butter
1 c. sugar
1 beaten egg
1 tsp baking soda

Bake @ 350 for about 13-15 min.

And that's it!!! I love recipes that are this simple & this good.

  1. I have done this with either no sugar added peanut butter or almond butter with no sugar. I used sweetener instead of sugar. Perfect. Actually I will have to look but I think the recipe I use has vanilla in it as well.

    Six years ago I had to give up refined sugar and all grains.

    I had some of these cookies this year for the first time and was in heaven! I used to be a cookie monster! I never met a cookie I didn't like :)

    So this is a lovely option for people who can not have flour!

  2. This was wonderful! Even my husband who is "anti" health food said they were as good as the ones his mom makes! So, with that said, you know they must be wonderful!
