Flat Bread - The greatest thing since sliced bread.

I have a new favorite accompaniment to egg scrambles. It has taken the place of pizza crust & sliced bread. It is flat bread. It is becoming somewhat of a staple here.  Which means I will begin to make bigger batches. I will also email Joanne - whose blog I follow (hearth & hospitality) and ask her if she has ever frozen flat bread.

This recipe was passed to me from the Joanne I just mentioned.
But in an attempt to eat as natural as possible, I did eliminate the potato flakes last time I made these & they still turned out great. I did add oregano & garlic powder.

Ok so here is the basic recipe:

2 c. flour
1-1/2 c. boiling water
1/2 c. potato flakes
1-1/4 tsp salt
2 Tbsp olive oil
1 tsp instant yeast

Combine flour & boiling water
let sit about 25 min.
Knead in other ing.
Divide into 8 sections & roll flat
(dust with flour to prevent sticking)
Put a skillet over medium heat
& allow the pan to heat.
Once that sucker is hot enough to evaporate a drop of water,
place your 1st flat bread on.
After a few minutes flip to the other side. I like mine a light toasty color. Think quesadilla's here in terms of doneness.

Forgot to take a picture until the last bite. Yeah there that good.

  1. Looks great! I forget to take the finished photos too ;) until they are eaten, that's why there aren't more cakes on the blog :)
